Vegan Nacho Cheese Sauce
Equipment
1 Medium Pot
1 Blender
Ingredients
1/2 Cup Potato Cubed
1/2 Cup Yellow Onion Diced
1/2 Cup Carrots Peeled & Diced
2 Cups Water (Plus 2 Tbsp for sautéing)
3 Cloves Garlic Minced
1/4 Cup Cashews Raw, Unsalted
1/4 Cup Nutritional Yeast
1/2 Tsp Paprika
1/2 Tsp Turmeric Powder
1/2 Tsp Sea Salt
1/4 Tsp Ground Black Pepper
1-2 Tsp Hot Sauce (To Taste)
Instructions
Heat 2 Tbsp of water in the medium pot, add potatoes, onions, carrots and garlic and sauté for 5 minutes.
Add two cups of water, cashews to the pot and bring to a boil
Cover pot and reduce to a simmer for 20 minutes, or until vegetables are cooked though and soft
Pour vegetables and liquid into a blender, add nutritional yeast and blend until smooth
Add additional water to make a more loose consistency and additional hot sauce if you would like it a little spicier!
