Vegan Nacho Cheese Sauce

Equipment

  • 1 Medium Pot

  • 1 Blender

Ingredients

  • 1/2 Cup Potato Cubed

  • 1/2 Cup Yellow Onion Diced

  • 1/2 Cup Carrots Peeled & Diced

  • 2 Cups Water (Plus 2 Tbsp for sautéing)

  • 3 Cloves Garlic Minced

  • 1/4 Cup Cashews Raw, Unsalted

  • 1/4 Cup Nutritional Yeast

  • 1/2 Tsp Paprika

  • 1/2 Tsp Turmeric Powder

  • 1/2 Tsp Sea Salt

  • 1/4 Tsp Ground Black Pepper

  • 1-2 Tsp Hot Sauce (To Taste)

Instructions

  • Heat 2 Tbsp of water in the medium pot, add potatoes, onions, carrots and garlic and sauté for 5 minutes.

  • Add two cups of water, cashews to the pot and bring to a boil

  • Cover pot and reduce to a simmer for 20 minutes, or until vegetables are cooked though and soft

  • Pour vegetables and liquid into a blender, add nutritional yeast and blend until smooth

  • Add additional water to make a more loose consistency and additional hot sauce if you would like it a little spicier!
